Kale & Sweet Potato Quiche

Hey y’all! I wanted to share this recipe for my go-to quiche with you guys. After I shared it in my workout group EVERYONE I’m not exaggerating here, literally everyone in the group wanted this recipe. Key Lime Coconut Popsicles

OMG y’all it is hot right now in Texas. Like hell on earth, the devil is my next door neighbor hot. Don’t get me wrong it’s ALWAYS hot in Texas, but the summer is especially hellish. Here lately each summer seems to get hotter and hotter. I got these adorable popsicle molds to come up with some healthier options to combat the heat instead of traditional ice cream. Plus popsicles are fun and I love that their already individually portioned.

Vegan Nut & Seed Bars

OMG you guys I made these nut and seed bars and they are soo good!! They are the perfect snack, well-rounded snack. These are a great pre-workout snack to give you the energy you need. Honestly, I’ve been struggling hard with late night snacking and I wanted something I could enjoy that was good for me. These satisfy my sweet and salty cravings perfectly! They are so yummy I just had to share with you guys.

Bacon, Spinach, and Tomato Frittata

A Healthier Pesto

I love pesto. It’s classic. It’s delicious. It goes with just about anything from pasta to sandwiches. I would slather my own arm in it and eat it if I could. Ok, well that might be a bit much. Anywho, now that I’ve shown you my crazy, let’s move on shall we? Back to the pesto! It’s not like pesto is all that unhealthy, but anytime I have the opportunity to make something healthier or boost it’s nutrition I feel compelled to take it!

Tomato Tart

I know it’s not summer. It’s winter. We’re in the dead of winter. But I’m in Texas so it’s been nearly 80 degrees some days. If you’re somewhere cold, windy, and/or rainy…you have my deepest condolences. I actually love winter and cold weather. I love knee high boots and scarves. But when you live in Texas you know those days are usually few and far between. So what do I do when it’s 76 degrees in December? I make tomato tarts. And you should too! Right now! Vegan Veggie Chowder

I’m on a journey to get healthier, eat more whole foods, and live a better life. But I LOVE food, good tasting- make you wanna dance-but not good for you food. So while I want to eat better, I’m not willing to sacrifice any flavor or go hungry!
